I was reading recently about "water hemlock", which grows all over North America. I had seen it many times as a kid: https://www.prairiemoon.com/cicuta-maculata-water-hemlock-prairie-moon-nursery.html Anyways, it supposedly is one of the most lethal plants on earth. If you ingest a little of it, it could kill you within 15 minutes. Given that there are things like that around in the environment, it's a miracle more people don't die, more often.

    I would assume the reason why more people don't die from eating water hemlock is people generally don't eat random plants.

    Kids put all kinds of things in their mouth. When I was a young child, I climbed up in the medicine cabinet and swallowed a random pill. I don't remember much about it, except that it involved some vomiting. Might have just been a Tylenol.
