There are very few objects that exist at those sizes, so relatively little probably. Femototech has very interesting opportunities, but beyond that, maybe not so much. Some physics experiments, perhaps, from creating exotic new fundamental particles.

what would the custom exotic matter or particles be capable of ?

Unusual combinations of quarks probably. Unless you can get neutrinos to somehow interact with things.
